Cook up this delightful meal to start your Mom's day off right!


Serve this amazing dish to Mom on her special day and the whole family can enjoy it. This breakfast casserole is perfect for a family affair or a brunch for guests. It can also be made on the weekend for breakfasts all week. Just pop a piece in the microwave and be assured of having a quality protein each day.

This recipe is based on Paleo cuisine as it does not include cow’s milk or cheese, nor gluten or grains. However, feel free to make adaptations as desired. You can use different kinds of potatoes, butternut squash or other squashes for the starch, and vary the vegetables as well. We suggest turkey sausage but you can choose your meat. To complete the meal, add a colorful fruit salad or green salad to go on the side - YUM!

Because there are a few steps in preparation, it’s best to do some work ahead of time. You could even make it all ahead and reheat in the morning. You’ll need a lightly greased 13x9 inch Pyrex baking pan and allow at least 40 minutes to bake.

Ingredients (serves 8-10):

• 2 sweet potatoes, cut into 1/2 inch cubes, peeling optional

• 1 large sweet onion, peels and sliced

• 1 lb or more of natural, organic sausage

• 3 cups fresh spinach (and other veggies?)

• 3-4 Tbs grapeseed or other oil of your choice

• 12 eggs

• 1 cup full-fat coconut milk from a can

• 1/8 tsp nutmeg

• salt and pepper to taste


1. Preheat oven to 400 degrees.

2. Place cubed potatoes on a cookie sheet, season, toss with 2-3 Tbs oil, and roast for 30 minutes. After roasting, lower oven temp to 350 degrees.

3. While potatoes are roasting, slowly sauté onions in 1 Tb oil until caramelized, about 20-25 minutes. Remove to a bowl.

4. Add a little more oil to the pan and brown the sausage on medium until all pink is gone. When complete, set aside.

5. Whisk all 12 eggs with milk, salt and pepper and nutmeg in a large bowl.

6. Assembly: Place sausage evenly covering the bottom of the baking pan. Next, place onions, spread over all the sausage.

7. After onions, place roasted potatoes or other starch across all.

8. Next, add the spinach and feel free to add any other vegetables, such as mushrooms, shallots, green onions, celery, grated carrots, etc. You may lightly sauté them first.

9. Finally, pour the egg mixture evenly over all so that it covers all the ingredients. Every bite should include every item!

10. Roast the entire pan in the oven for 40 minutes at 350 degrees, Check for doneness before removing.
