"Skinny" Ice Cream Sandwiches

Sometimes you just need to treat yourself! Try our "skinny" version of an old school treat and give your guilt the cold shoulder! 

"Skinny" Ice cream Sandwich

  • 1 sleeve of Graham Crackers (your favorite flavor, but we of course, chose chocolate!)
  • 1 container of fat-free whipped topped, partially defrosted
  • Berries or fruit of your choice (optional)
  • clear plastic food wrap

Break the graham cracker rectangles in half to form squares. Lay out a square of clear plastic food wrap and place one graham cracker square face down on the wrap. Using a spatula, spread a 1/4 cup of the whipped topping over the graham cracker. This works best if the topping is still partially frozen.  Add berries or fruit if desired. Then place another graham square on top to form a sandwich. Wrap the sandwich in plastic wrap and place in the freezer. For the best taste, eat within 2 weeks.
